- St. Aubin 1er Cru Les Castets 2015, Thomas Morey
There is just enough reduction present to push the underlying fruit to the background but it definitely seems ripe. There is superb intensity to the big-bodied and tautly muscular flavors that possess outstanding mid-palate density before culminating in a harmonious, balanced and hugely long finish. While this definitely delivers impressive flavor authority the overall impression is actually one of refinement and restraint; indeed this could accurately be described as an elegant Bâtard that should amply reward all of a decade of cellaring. If you can find it, buy it.
Terroir
Brown limestone soil enriched with clay and silt, washed down from above and mixed with a good proportion of pebbles. The soil is well-exposed, sufficiently porous, well-drained (favouring run-off), and provides the warm, dry conditions best suited to vine-growing.

Thomas Morey
When the legendary Bernard Morey retired in 2005, his sons Thomas and Vincent continued running the estate until 2007, where they amiably split to form wineries under their own names. Besides splitting the land, little has changed in Thomas' work. The winemaking, which remains classically Burgundian, does have its particularities: Thomas uses only indigenous yeasts for fermentations, never filters the reds and keeps the white wines on their lees until bottling for extra fat and texture. He also never adds sulfur before or during vinification: small doses are added over a six month period after malolactic fermentation so it can integrate itself into the wine over a long term, and this process permits Thomas to not have to use any at bottling. They are located in Chassagne-Montrachet, and work on 13 hectares of vines spread across 6 villages: Les Marangues, Santenay, Chassagne-Montrachet, Puligny-Montrachet, Saint-Aubin and Beaune. They produce about 45, 000 bottles of white and 15, 000 bottles of red.
