The fresh varietal character of Ribolla and the refinement of the traditional method give rise to a delicate sparkling wine with a mineral character and notes of citrus and bread. The finish is long, marked by perfect balance and a subtle saline mineral note characteristic of this terroir.
Hand-harvested at the chosen time to ensure freshness and optimal sugar levels. Gentle pressing of whole clusters is followed by decanting and fermentation at a controlled temperature. Before secondary fermentation, the wine matures on the lees for a minimum of 6 months, which takes place in the bottle. The wine then ages on its own yeast culture for at least 36 months.

Sinefinis
Sinefinis sparkling wines tell the story of the connection between two wine regions and two countries: Collio in Italy and Brda in Slovenia. The brand was founded by two winemakers, Robert Princic from Giasbana-San Floriana and Matjaž Četrtič from Kojsko in Brda. Although both live just a step away from the Slovenian-Italian border, they first met during their Wine Business Masters studies. Together, they created a wine that represents their dedication to viticulture and symbolizes the strong bond between the two wine-growing regions.
