Extra virgin olive oil Ex Albis:Extra virgin olive oil Ex Albis is oil derived from Istrian autochthon sorts of olive trees: istarska buža, vodnjanska crnica, istarska bjelica and moražola. The oil has an intensive and most refined scent, enriched with an elegant dash of wild chicory, artichoke and dried fruit. Its characteristics include a rich balsamic tonality of mint, rosemary, sage and an accentuated touch of sweet almond. It blends perfectly with mixed vegetable salads, bean appetizers, mushroom soup, mollusk dishes, grilled fish, marinated tuna, red and white meat, as well as various cheeses. The oil can be served with desserts as well, and it goes best with vanilla ice cream and chocolate desserts. Extraction of oil:A turning point in the extraction of olive oil, introduced by OPG Chiavalon,a completely unknown procedure in the production of olive oil until then, was early harvesting of olives and the processing of picked olive fruits the same day. This procedure includes the picking of olives when only approximately a third of the fruits are ripe or have changed color, and processing the olives on the same day they were gathered. The olives are processed in a modern and approved olive oil factory, which uses a cold processing procedure in controlled atmosphere. This kind of processing results in just the kind of oil that is in the olive fruit itself: the oil is not oxidized, it contains a low level of saturated fatty acids and a high level of polyphenols which are very strong antioxidants. All the ingredients of Ex Albis olive oil have a very positive effect on a person’s health. For that reason olive oil is considered to be also a medicine, not just one of the condiments.Another important novelty the Chiavalons introduced is the storage and preservation of oil after it has been processed. Since they are aware that the most dangerous enemies of high quality olive oil are high temperature, direct sunlight and exposure to air or oxygen, the oil is, after it has been processed, stored in stainless steel containers. When the containers have been sealed, they are filled up with inert gas which prevents any possibility of air entering the container, and in no way affects the quality of the oil. The storage facilities maintain a constant temperature of 16°C which is the ideal temperature for storage of olive oil.Awards:Since 2000 up to today extra virgin olive oil Ex Albis has been awarded mostly gold and grand gold medals in olive oil competitions in Vodnjan, Vinistra in Poreč, Maslina in Split and Alma Armonia in Italy. Since 2005 the oil has been listed in the international catalogue Slow Food, as well as in the prominent international guide L'Extravergine from Rome. Competing with more than 5,000 samples of olive oil from all over the world, in 2008 extra virgin olive oil Ex Albis was included in L’Extravergine’s Top 15 olive oils with high recommendation. Equally graded in the 2009 catalogue, it is placed among the top olive oils in the world. Producer:Sandi Chiavalon is a 26-year-old young man from Vodnjan, an ancient town in the south of Istria, Croatia. He is a graduate of the Faculty of Agriculture in Zagreb, and he completed the Agricultural High School in Poreč. He has been growing olives and producing olive oil since the age of 14. He received his first award for olive oil already at the age of 16. Since then he has collected more than 25 awards in various Croatian and international competitions. Sandi Chiavalon is one of the first initiators in introducing new methods of growing olives and producing olive oil. His success is reflected in the numerous awards he has received, and in the fact that he, already as a 20-year-old, managed to profile himself as one of the leading producers of high quality olive oil in Croatia and the region.
