Pinot Noir grapes are harvested only from the excellent location of Sv. Ana. The grapes are picked little later and only in good vintages, when the grapes can fully ripen and reach a higher concentration and optimal phenolic maturity. Boiling takes place at a temperature between 25 ° and 30 ° C, maceration lasts for three weeks. The wine matures for at least 24 months in 225 l oak barrels (barriques), half of which are new and half are once used. Complete biological deacidification is a mandatory element that softens acids and rounds off the taste.
